Stewed Mushrooms
Origin: Tidewater Virginia
Source: Mary Randolph, 1824
Ingredients
- mushrooms
- some salt
- 1 spoonful butter
- 1 spoonful brown flour
- red wine
Instructions
- Select grown mushrooms that are young enough to have red gills. Cut off the portion of the stem that grew in the earth. Wash them carefully and remove the skin from the top.
- Place the prepared mushrooms into a stew pan with some salt but no water. Stew them until tender.
- Thicken with a spoonful of butter mixed with one spoonful of brown flour. Red wine may be added if desired, though the author notes the natural flavor of the mushroom is too delicious to require aid from anything.
