To Boil a Shad

Ingredients
- 1 shad
- 1 wine glass pale vinegar
- salt
- a little garlic
- 1 bundle parsley
- scraped horse-radish
- melted butter
- catsups
Instructions
- Select a nice fat shad, fresh from the water, to prevent the skin from cracking during boiling. Place the fish on a slice (or rack) in a kettle of proper length and cover with cold water. Add a wine glass of pale vinegar, salt, a little garlic, and a bundle of parsley.
- Boil until done. Drain all the water from the fish and lay it in the serving dish. Garnish with scraped horse-radish.
- Serve with a sauce boat of nice melted butter, mixed with different catsups according to taste.
