Boil Ducks with Onion Sauce

Ingredients
- 2 whole ducks
- 1 pint milk
- flour
- water
- onion sauce
Instructions
- Scald and draw the ducks. Place them in warm water for a few minutes, then transfer to an earthen pot. Pour a pint of boiling milk over them and let them soak for two or three hours.
- Remove the ducks from the milk and dredge them well with flour. Place them in a copper (or large cooking vessel) of cold water and cover. Let them boil slowly for twenty minutes.
- Remove the ducks and smother them with onion sauce.
