Boil Ducks with Onion Sauce

Ingredients

Instructions

  1. Scald and draw the ducks. Place them in warm water for a few minutes, then transfer to an earthen pot. Pour a pint of boiling milk over them and let them soak for two or three hours.
  2. Remove the ducks from the milk and dredge them well with flour. Place them in a copper (or large cooking vessel) of cold water and cover. Let them boil slowly for twenty minutes.
  3. Remove the ducks and smother them with onion sauce.
