Risen Cake

Ingredients
- 3 pounds flour
- 1.5 pounds sugar
- 1 teaspoon cloves
- 1 teaspoon mace
- 1 teaspoon ginger
- 4 spoonsful yeast
- 12 eggs
- milk
- 1 pound butter
- 2 gills brandy
- 2 pounds raisins
Instructions
- Pass the flour, pounded sugar, cloves, mace, and ginger (all finely powdered) through a sieve together. Add the yeast and eggs, and mix well. If the mixture is not sufficiently soft, add a little milk. Make up the dough at night and set it to rise.
- When well risen, knead in the pound of butter and the brandy. Stone the raisins and mix them in thoroughly with all the other ingredients. Pour the batter into a mould of proper size.
- Bake in an oven heated as for bread. Let it stand until thoroughly done. Do not remove it from the mould until it is quite cold.
