Risen Cake

Ingredients

Instructions

  1. Pass the flour, pounded sugar, cloves, mace, and ginger (all finely powdered) through a sieve together. Add the yeast and eggs, and mix well. If the mixture is not sufficiently soft, add a little milk. Make up the dough at night and set it to rise.
  2. When well risen, knead in the pound of butter and the brandy. Stone the raisins and mix them in thoroughly with all the other ingredients. Pour the batter into a mould of proper size.
  3. Bake in an oven heated as for bread. Let it stand until thoroughly done. Do not remove it from the mould until it is quite cold.
