Omelette—Another Way

Ingredients

Instructions

  1. Break six eggs, leaving out half the whites.
  2. Beat them with a fork and add some salt and chopped parsley.
  3. Take four ounces of fresh butter. Cut half of it in small pieces and put them in the omelette; put the other half in a small frying pan.
  4. When it is melted, pour in the eggs.
  5. Stir till it begins to set, then turn it up round the edges.
  6. When done, put a plate on and turn the pan up, so that it may not break.
  7. The omelette must be thick, and great care must be taken in frying.
  8. Instead of parsley, you may use any kind of sweet herb or onion chopped fine, anchovy minced, rasped beef, ham or tongue.
