Asparagus Soup

Instructions

  1. Scrape the asparagus nicely and cut off the top inch; set the tops aside in water. Chop the stalks and place them in a pot with a piece of bacon, a large cut-up onion, pepper, and salt. Add two quarts of water and boil until the stalks are quite soft.
  2. Pulp the cooked stalks through a sieve and strain the water back into the pot. Add the chicken cut up and the reserved asparagus tops. Boil until the chicken and asparagus tops are sufficiently done.
  3. Thicken the soup with flour, butter, and milk, then serve.
