Bell Fritters

Ingredients
- 1 piece butter
- 1 pint water
- 1 pint flour
- 5-6 eggs
- 1 pint lard
Instructions
- Put a piece of butter the size of an egg into a pint of water and let it boil a few minutes. Thicken it very smoothly with a pint of flour. Let it remain a short time on the fire, stirring constantly so it does not stick to the pan.
- Pour the mixture into a wooden bowl. Add the eggs one at a time, breaking and beating each one in thoroughly before adding the next, until all are incorporated and the dough is quite light.
- Put a pint of lard in a pan and let it boil. Make the fritters small and fry them until they are a fine amber colour.
