To Preserve Cling-Stone Peaches

Instructions

  1. Select the finest yellow cling-stone peaches. Pare them and lay them in a bowl.
  2. Pound sugar equal in weight to the peaches and sprinkle it over them as they are placed in the bowl. Let them stand for two or three hours.
  3. Transfer the peaches together with the sugar into a pan, add a little water, and let the peaches remain until thoroughly scalded. Remove them with a ladle, draining off the syrup.
  4. If there is not enough syrup to cover the peaches, add more water. Boil the syrup and skim it.
  5. Return the fruit to the syrup and cook gently until quite clear.
  6. Crack some of the peach stones, blanch the kernels, and preserve them together with the peaches.
