Knuckle of Veal

Ingredients

Instructions

  1. Boil the pearl barley in salted water until completely tender. Drain the water from the barley and stir in a piece of butter. Transfer the barley to a deep dish.
  2. Boil the knuckle of veal in a mixture of milk and water until nicely cooked. Lay the boiled knuckle on the barley.
  3. Pour a sauce of parsley and butter over the top.
