Knuckle of Veal

Ingredients
- 0.5 pint pearl barley
- salt
- water
- butter
- 1 whole knuckle of veal
- milk
- water
- parsley
- butter
Instructions
- Boil the pearl barley in salted water until completely tender. Drain the water from the barley and stir in a piece of butter. Transfer the barley to a deep dish.
- Boil the knuckle of veal in a mixture of milk and water until nicely cooked. Lay the boiled knuckle on the barley.
- Pour a sauce of parsley and butter over the top.
