Cod Fish Pie

  1. Soak the cod fish, then boil it. Remove the skin and carefully pick the meat from the bones, mincing it very fine.
  2. Grate the stale bread—you will need double the quantity of the minced fish. Pour boiling hot new milk over the bread until it is completely wet.
  3. Add the minced parsley, nutmeg, pepper, and made mustard to the bread mixture. Stir in the melted butter—the amount should be sufficient to make the mixture rich and moist, adjusted according to the quantity of other ingredients. Beat these together very well.
  4. Add the minced fish and mix all thoroughly. Line the bottom of a baking dish with good paste. Pour the fish mixture into the dish, cover with a paste lid, and bake until golden.
