To Pickle Cucumbers

  1. Gather cucumbers full grown but quite young. Remove the green rind and slice them tolerably thick. In a deep dish, layer the cucumber slices, strewing chopped onion and salt over each layer, continuing until all cucumbers are in the dish. Sprinkle salt on the top and let them stand for six hours.
  2. Transfer the cucumbers to a colander and allow all the liquor to drain off completely. Return the drained cucumbers to a pot, strewing a little cayenne pepper over each layer. Cover them with strong cold vinegar.
  3. When the pot is full, pour sweet oil on top and tie it closed securely. At the end of a fortnight, pour off the first vinegar and replace it with fresh vinegar.
