Potato Paste

Instructions

  1. Boil mealy potatoes until quite soft, then remove the skins. While hot, rub them through a sieve. Place the sieved potatoes in a stew pan over the fire and add enough water to make the mixture the consistency of thick mush.
  2. Sift the flour and make it into a paste. Knead this flour paste into the warm potato mush until light. Roll out thin and make small dumplings. Fill each dumpling with apples or other fruit.
  3. Tie the dumplings up in a thick cloth and boil them nicely. Serve with butter, sugar, and nutmeg.
