Potato Paste
Origin: Tidewater Virginia
Source: Mary Randolph, 1824
Ingredients
- potatoes
- water
- 1 quart flour
- apples or other fruit
- butter
- sugar
- nutmeg
Instructions
- Boil mealy potatoes until quite soft, then remove the skins. While hot, rub them through a sieve. Place the sieved potatoes in a stew pan over the fire and add enough water to make the mixture the consistency of thick mush.
- Sift the flour and make it into a paste. Knead this flour paste into the warm potato mush until light. Roll out thin and make small dumplings. Fill each dumpling with apples or other fruit.
- Tie the dumplings up in a thick cloth and boil them nicely. Serve with butter, sugar, and nutmeg.
