Batter Cakes

Ingredients
- 2 cups small hominy
- 2 cups corn meal
- salt
- 1 large spoonful butter
- 3 eggs
- milk
Instructions
- Boil two cups of small hominy until very soft. Add an equal quantity of corn meal with a little salt and a large spoonful of butter. Make the mixture into a thin batter by adding three eggs and sufficient milk. Beat all together for some time.
- Bake the batter on a griddle or in waffle irons.
- If eggs cannot be procured, substitute one spoonful of yeast instead. Let the batter stand for an hour to rise before baking.
