Batter Cakes

Ingredients

Instructions

  1. Boil two cups of small hominy until very soft. Add an equal quantity of corn meal with a little salt and a large spoonful of butter. Make the mixture into a thin batter by adding three eggs and sufficient milk. Beat all together for some time.
  2. Bake the batter on a griddle or in waffle irons.
  3. If eggs cannot be procured, substitute one spoonful of yeast instead. Let the batter stand for an hour to rise before baking.
