To Stew Wild Ducks

Ingredients
- wild ducks
- salt
- pepper
- a little powdered cloves
- 1–2 shallots
- 1 lump butter
- butter
- vinegar
- water
- pepper
- salt
- lemon peel
- 1 bunch sweet herbs
- lemon
- bread
Instructions
- Rub the insides of the prepared ducks with salt, pepper, and a little powdered cloves. Place a shallot or two and a lump of butter in the body of each duck.
- Lay the ducks in a pan that will just hold them. Put butter under and over them. Add vinegar and water along with pepper, salt, lemon peel, and a bunch of sweet herbs.
- Cover the pan closely and let the ducks stew until done. Pass the liquor through a sieve and pour it over the ducks.
- Serve hot, garnished with sliced lemon and fried bread raspings.
