To Pitchcock Eels

Ingredients

Instructions

  1. Skin and wash your eels, then dry them with a cloth.
  2. Sprinkle them with pepper, salt, and a little dried sage.
  3. Turn them backward and forward, and skewer them.
  4. Rub a gridiron with beef suet and broil them a nice brown.
  5. Put them on a dish with good melted butter, and lay around fried parsley.
