Oyster Catsup

Ingredients
- oysters
- 1 ounce salt
- 2 drachms mace
- 1 drachm cayenne pepper
- 1 pint white wine
- 1 glass brandy
Instructions
- Wash the fresh oysters in their own liquor. Combine the oysters in a marble mortar with salt, pounded mace, and cayenne pepper in the proportions specified. Pound them together until well combined. Add white wine in the proportion of one pint per pint of oysters.
- Boil the mixture for some minutes. Rub it through a sieve. Boil it again, skim the surface, and allow it to cool. Bottle, cork, and seal it. If a glass of brandy is added, it will keep good for a considerable time.
