Peach Cordial

Ingredients

Instructions

  1. Gather ripe cling-stone peaches and wipe off the down. Cut them to the stone in several places and place them in a cask. When the cask is filled with peaches, pour in as much peach brandy as the cask will hold.
  2. Let the mixture stand for six to eight weeks. Draw it off and add water until the cordial is reduced to the strength of wine.
  3. For each gallon of this mixture, add one pound of good brown sugar. Dissolve the sugar and pour the cordial into a cask just large enough to hold it.
  4. When the cordial is perfectly clear, it is fit for use.
