Peach Cordial

Ingredients
- ripe cling-stone peaches
- peach brandy
- water
- 1 pound good brown sugar
Instructions
- Gather ripe cling-stone peaches and wipe off the down. Cut them to the stone in several places and place them in a cask. When the cask is filled with peaches, pour in as much peach brandy as the cask will hold.
- Let the mixture stand for six to eight weeks. Draw it off and add water until the cordial is reduced to the strength of wine.
- For each gallon of this mixture, add one pound of good brown sugar. Dissolve the sugar and pour the cordial into a cask just large enough to hold it.
- When the cordial is perfectly clear, it is fit for use.
