Crumpets

Ingredients
- 1 quart bread dough
- 3 fresh eggs
- milk-warm water
Instructions
- Take a quart of dough from your bread at a very early hour in the morning. Break three fresh eggs and separate the yolks from the whites. Whip both the yolks and whites to a froth separately. Mix the frothed eggs with the dough, then gradually add milk-warm water until you make a batter the thickness of buckwheat cakes. Beat the batter well and set it to rise until near breakfast time.
- Have the griddle ready. Pour the batter onto the griddle to form quite round cakes. They do not require turning.
