Baked Leg of Mutton

Instructions

  1. Remove the flank from the leg of mutton but leave all the fat intact. Cut out the bone and stuff the cavity with rich forcemeat. Lard the top and sides with bacon. Place the prepared mutton in a baking pan with a pint of water, chopped onion, and celery cut small. Add a gill of red wine, a gill of mushroom catsup, and a teaspoon of curry powder.
  2. Bake until cooked through. Serve with the pan gravy and garnish with fried forcemeat balls.
