To Dress a Salt Cod

Instructions

  1. Steep the salt fish in water overnight with a glass of vinegar; this will draw out the salt and make it taste like fresh fish. The next day, boil it until it is cooked through. When done, remove the skin and pull the flesh into flakes into your serving dish. Pour egg sauce over it, or alternatively use parsnips that have been boiled and beaten fine, mixed with butter and cream. Send it to the table on a water plate, as it will soon grow cold.
