Morello Cherries

Ingredients
- 1 pound morello cherries
- 1 pound sugar
Instructions
- Remove the cherry stones using a quill, working over a deep dish to catch and preserve the juice that runs from the fruit.
- Measure the cherries after stoning. Add sugar in equal proportion—one pound of sugar for each pound of stoned cherries—to the collected juice.
- Boil the syrup and skim off any impurities that rise to the surface.
- Add the stoned cherries to the syrup and stew gently until the fruit becomes quite clear.
