Mushroom Sauce

Ingredients

Instructions

  1. Clean and wash the mushrooms, cut them in two, and put them into a stew-pan with a little salt, a blade of mace, and a little butter. Stew them gently for half an hour.
  2. Add half a pint of cream and the beaten egg yolks, keeping the mixture stirred constantly until it boils up.
  3. Serve over fowls or turkeys, or alternatively place a piece of fried bread (first buttered, then toasted brown and just dipped into boiling water) on a dish and pour the sauce over it.
