Mushroom Sauce

Ingredients
- 1 quart fresh mushrooms
- salt
- 1 blade of mace
- butter
- 0.5 pint cream
- 2 egg yolks
- 1 piece bread
Instructions
- Clean and wash the mushrooms, cut them in two, and put them into a stew-pan with a little salt, a blade of mace, and a little butter. Stew them gently for half an hour.
- Add half a pint of cream and the beaten egg yolks, keeping the mixture stirred constantly until it boils up.
- Serve over fowls or turkeys, or alternatively place a piece of fried bread (first buttered, then toasted brown and just dipped into boiling water) on a dish and pour the sauce over it.
