Mushroom Catsup

Ingredients
- 1 peck mushrooms (flaps only, from stems)
- salt
- few garlic cloves
- 0.25 ounce cloves (spice)
Instructions
- Separate the flaps of mushrooms from the stems and wash them. Add salt and crush them thoroughly. Boil for some time, then strain through a cloth.
- Return the strained liquid to the fire. Add salt to your taste, a few cloves of garlic, and a quarter ounce of pounded cloves per peck of mushrooms. Continue boiling until the mixture is reduced to less than half its original quantity.
- Bottle and cork well.
