To Dry Cherries

Instructions

  1. Stone the cherries and save the juice. Weigh the cherries and measure out one pound of good brown sugar for every three pounds of fruit.
  2. Boil the sugar with the reserved cherry juice, then add the stoned cherries and stew them for fifteen to twenty minutes. Remove the cherries and drain off the syrup.
  3. Lay the cherries in dishes to dry in the sun. As they dry, pour a little of the reserved syrup over them from time to time, turning the cherries frequently.
  4. When all the syrup has been used and the cherries are dry, pack them into pots, sprinkling a little powdered loaf sugar between the layers. They may be used for pies, puddings, and charlottes.
