To Boil Rice

Ingredients
- 2 cups rice
- 2.5 cups cold water
- 1 teaspoon salt
Instructions
- Put two cups of rice in a bowl of water and rub it well with your hand. Pour off the water. Repeat this rinsing process until the water no longer becomes discolored.
- Place the rinsed rice in two and a half cups of cold water. Add a teaspoon of salt and cover the pot tightly. Set it on a brisk fire and let it boil for ten minutes.
- Pour off the greater part of the water. Remove the pot to a bed of coals and let it remain for a quarter of an hour to soak and dry.
