To Boil Rice

Instructions

  1. Put two cups of rice in a bowl of water and rub it well with your hand. Pour off the water. Repeat this rinsing process until the water no longer becomes discolored.
  2. Place the rinsed rice in two and a half cups of cold water. Add a teaspoon of salt and cover the pot tightly. Set it on a brisk fire and let it boil for ten minutes.
  3. Pour off the greater part of the water. Remove the pot to a bed of coals and let it remain for a quarter of an hour to soak and dry.
