Field Peas

Ingredients
- Field peas
- Lard
- Bacon
Instructions
- Shell young field peas and boil them until tender. Drain them thoroughly in a colander.
- Heat lard in a frying pan until it boils. Mash the peas and fry them in a cake until light brown. Turn out onto a dish with the crust facing uppermost. Garnish with thin bits of fried bacon.
- Alternatively, the peas may be fried whole so that each pea remains distinct from the others—in this case, boil them less and fry with great care. Plain boiling is also a common and simple way of dressing them.
