Oyster Sauce for Fish

Ingredients
- 1 pint oysters
- oysters
- 1 large spoonful anchovy liquor
- 1/2 lemon
- 2 blades mace
- butter
- 1/2 pound butter
Instructions
- Scald a pint of oysters and strain them through a sieve, reserving the liquor. Wash additional oysters in cold water and remove their beards. Put the cleaned oysters in a stew-pan and pour the strained liquor over them.
- Add a large spoonful of anchovy liquor, half a lemon, and two blades of mace. Thicken the mixture with butter rolled in flour.
- Add half a pound of butter and boil until melted. Remove the mace and lemon, then squeeze the lemon juice into the sauce. Continue boiling and stirring constantly. Transfer to a sauce boat for serving.
