Squash or Cimlin

Ingredients
- young squashes
- 1 cup cream
- butter
- pepper
- salt
Instructions
- Gather young squashes, peel them, and cut in half. Remove the seeds. Boil until tender, then place in a colander and drain off the water.
- Rub the squash through the colander with a wooden spoon to purée it. Put the purée into a stew pan with a cup of cream, a small piece of butter, pepper, and salt.
- Stew over moderate heat, stirring frequently until the mixture becomes dry.
