Kabīs (Tandoor-Baked Meat, Wheat and Chickpea Pot)

Ingredients

Instructions

  1. Cut fatty meat into medium pieces, wash, and put in a pot.
  2. Add a handful of chickpeas, a handful of hulled wheat, salt, cinnamon sticks, dry coriander, cumin, mastic, and stalks of dill.
  3. Add plenty of water and put yearling-lamb extremities in with the meat.
  4. Set the pot in the tannūr from early night until morning, then lift out.
  5. Lay a bread sop (tharīda) underneath, dust with finely ground cumin and cinnamon, and serve.
