Kabīs (Tandoor-Baked Meat, Wheat and Chickpea Pot)

Ingredients
- fatty meat
- handful chickpeas
- handful hulled wheat
- cinnamon
- dry coriander
- cumin
- mastic
- dill
- yearling lamb extremities
- salt
- bread
Instructions
- Cut fatty meat into medium pieces, wash, and put in a pot.
- Add a handful of chickpeas, a handful of hulled wheat, salt, cinnamon sticks, dry coriander, cumin, mastic, and stalks of dill.
- Add plenty of water and put yearling-lamb extremities in with the meat.
- Set the pot in the tannūr from early night until morning, then lift out.
- Lay a bread sop (tharīda) underneath, dust with finely ground cumin and cinnamon, and serve.
