Soufflé (Another Cheese)

Instructions

  1. Cut the cheese very thinly and mix it with 3 eggs, well whisked.
  2. Then add about one eggspoonful of mustard, a little cayenne and salt, and a very little cold milk.
  3. Set 1 quart of milk to boil and add a teaspoonful of butter.
  4. Pour it on the cheese and the rest, and bake a light brown.
  5. It can be eaten hot or cold.
