Preserve (Green Apricot)

Ingredients
- 100 whole green or unripe apricots
- sugar
- about 1 dessertspoon salt
- 1 cup water
- 1 cup sugar
- green vine-leaves
Instructions
- Prick the fruit with a steel pin and lay them in a deep dish.
- Sprinkle about a dessertspoon of salt over them.
- Pour boiling water over the fruit.
- Cover with green vine-leaves to keep them green, and lay a plate on top.
- Make the syrup by taking a cup of water to a cup of sugar.
- Boil and clarify the syrup.
- Take the apricots out of the salt water and wash them.
- Pour the boiling syrup over the apricots and leave overnight.
- The next day, gently simmer the fruit until it is nice and clear.
