Būrāniyya (Eggplant and Meat Stew-Fry)

History
Būrāniyya (بورانية) belongs to a family of dishes named for Būrān, the Persian-born bride of the Abbasid caliph al-Ma'mūn, whose 825 CE Baghdad wedding was among the most lavish on record. Tradition remembers Būrān as an accomplished cook renowned for fried-aubergine dishes, and credits her table with the discovery that salting and rinsing cut eggplant strips it of bitterness — after which, the story goes, people lost their fear of the vegetable. Al-Baghdadi's version is a savory stew-fry, not a yogurt dish: fatty meat and small meatballs simmered with coriander, cumin, cinnamon, black pepper and mastic, then layered with fried eggplant and onion and finished with a little murrī and saffron. As a lineage claim, "būrāniyya" became less a fixed recipe than a naming tradition — medieval Arabic cookbooks gathered many eggplant dishes under burrāniyyāt, some also ascribed to the gourmand prince Ibrāhīm ibn al-Mahdī. The name then traveled far. In Persian usage borani broadened into a generic category of cooked vegetables (often eggplant or spinach) dressed with yogurt and garlic, and an alternative folk etymology even reaches back to the Sasanian queen Pūrāndokht. Borani dishes are made today across Iran, Turkey (Isparta, Urfa, Van), Afghanistan, the Caucasus and into the Balkans — southern Albania and the Aromanians of the Greek Pindus — while a western-Algerian burāniyya and the Andalusi-descended Spanish alboronía carry the same root westward.

Instructions
- Render tail fat, remove cracklings; sweat small-cut fatty meat with a little salt and pounded coriander until colored and aromatic.
- Cover with water, add green coriander and cinnamon stick; boil, skim; when reduced add halved onion, a dirham each of salt and coriander, and cumin, cinnamon, pepper, mastic pounded fine.
- Add small kubab of pounded lean meat.
- Cap, score and fry eggplant with whole onions in sesame oil or clarified tail fat.
- Optionally add a little murrī, color with a dāniq of saffron, arrange fried eggplant over the meat, dust with coriander and cinnamon, sprinkle rosewater, settle and take up.
