Jam (Melon)

Instructions

  1. Mince the ripe melon, or cut it in thin slices, and put it into a preserving-pot that has been oiled beforehand. Add a small piece of bruised ginger, tied in a bag.
  2. Let it just boil up, then add 4 lb. of sugar.
  3. Boil till clear, and the juice nice and thick. Stir repeatedly, or it will burn.
  4. Cork well.
