Cutlets

Ingredients
- cutlets
- a little milk
- bread-crumbs
- nutmeg
- pepper
- salt
- egg
- lard or dripping
- mashed potatoes
- about a dozen tomatoes
- a small piece onion
- a pat butter
Instructions
- Trim the cutlets carefully.
- Lay them in a little milk for five or six hours to make the meat white and tender.
- Have ready some fine bread-crumbs, nutmeg, pepper, and salt.
- Roll the cutlets in egg and bread-crumbs.
- Sprinkle with pepper, salt, and nutmeg.
- Fry in hot lard.
- Serve with mashed potatoes.
- If tomatoes are plentiful, boil about a dozen with a small piece of onion.
- Strain the tomato mixture and add a pat of butter.
- Serve the tomato sauce round the cutlets.
