Cutlets

Ingredients

Instructions

  1. Trim the cutlets carefully.
  2. Lay them in a little milk for five or six hours to make the meat white and tender.
  3. Have ready some fine bread-crumbs, nutmeg, pepper, and salt.
  4. Roll the cutlets in egg and bread-crumbs.
  5. Sprinkle with pepper, salt, and nutmeg.
  6. Fry in hot lard.
  7. Serve with mashed potatoes.
  8. If tomatoes are plentiful, boil about a dozen with a small piece of onion.
  9. Strain the tomato mixture and add a pat of butter.
  10. Serve the tomato sauce round the cutlets.
