Manbūsha (Pounded-Meat Fry with Eggs)

Ingredients
- lean red meat
- fresh tail fat
- salt
- dried coriander
- chickpeas
- spice mix
- eggs
- rosewater
Instructions
- Pound lean meat fine, remove veins and cartilage, parboil in salted water and drain.
- Render tail fat, stir the meat until colored, cover with water, add salt, dried and green coriander.
- Add a handful of halved peeled chickpeas; cook until dry and returned to its fat.
- Season with cumin, pepper, cinnamon and mastic finely ground.
- Arrange whole eggs on top, dust with cinnamon, sprinkle rosewater, settle and take up.
