Manbūsha (Pounded-Meat Fry with Eggs)

Ingredients

Instructions

  1. Pound lean meat fine, remove veins and cartilage, parboil in salted water and drain.
  2. Render tail fat, stir the meat until colored, cover with water, add salt, dried and green coriander.
  3. Add a handful of halved peeled chickpeas; cook until dry and returned to its fat.
  4. Season with cumin, pepper, cinnamon and mastic finely ground.
  5. Arrange whole eggs on top, dust with cinnamon, sprinkle rosewater, settle and take up.
