Chutney (Another) (Aunt Fanny's Indian Recipe)

Instructions

  1. Peel and cut the quinces, apples, or apricots.
  2. Boil them in three bottles of vinegar till soft.
  3. Mash in 1 lb. of sugar and the other ingredients: the salt, the dried chillies, the raisins, the garlic, and the ginger.
  4. Then add the rest of the 4 quarts of vinegar.
  5. Cork. It will keep for years, and improves by age.
