Mutton Chops in Batter

Ingredients

Instructions

  1. Cut nice little slices from a tender leg of mutton or loin.
  2. Season the slices with pepper, salt, and a little nutmeg.
  3. Prepare a batter by combining half a pint of milk, three tablespoonfuls of flour, and two eggs; if eggs are scarce, mix flour with thick milk and half a teaspoonful of carbonate of soda instead to make a light, nice batter.
  4. Dip each slice in the batter.
  5. Fry in hot dripping or lard as you would a cutlet.
