Mutton Chops in Batter

Ingredients
- mutton
- pepper
- salt
- a little nutmeg
- 0.5 pint milk
- 3 tablespoon flour
- 2 eggs
- dripping or lard
Instructions
- Cut nice little slices from a tender leg of mutton or loin.
- Season the slices with pepper, salt, and a little nutmeg.
- Prepare a batter by combining half a pint of milk, three tablespoonfuls of flour, and two eggs; if eggs are scarce, mix flour with thick milk and half a teaspoonful of carbonate of soda instead to make a light, nice batter.
- Dip each slice in the batter.
- Fry in hot dripping or lard as you would a cutlet.
