Irish Stew

Ingredients

Instructions

  1. Cut the mutton into chops of moderate thickness.
  2. Pare and slice the potatoes, and cut the onions in rings.
  3. Put a layer of potatoes at the bottom of the stewing-pan.
  4. Add a layer of mutton and onions on top of the potatoes, and season with pepper and salt.
  5. Proceed in this layering manner till all ingredients are used, taking care to have plenty of vegetables at the top.
  6. Pour in the water.
  7. Let it stew gently for two and a half hours, keeping the lid of the stewing-pan closely shut.
  8. Occasionally shake the pot to prevent burning.
