Soufflé (Cheese)

Instructions

  1. Melt the butter and mix it with 1 tablespoonful of flour.
  2. Add the milk slowly, then a little salt and pepper (cayenne).
  3. Then add a breakfast-cup of grated cheese and the yolks of 3 eggs.
  4. Lastly stir in the whites of the eggs, beaten separately into a froth.
  5. Put into a flat buttered dish and leave to bake a nice brown. Time, twenty minutes.
  6. Serve hot.
