Bard ("Hail" — Fried Batter-Drop Sweet)

Instructions

  1. Knead fine semolina into a soft batter and leave it until it ferments.
  2. Heat sesame oil in the cauldron and drop droplets of batter in so they set; lift them out with a slotted skimmer, drained of oil.
  3. Dissolve honey in rose water and boil until it gains body, then take off the fire and beat it until it whitens.
  4. Fold the fried droplets into the honey, turn out onto an oiled slab, gather into a mold shape, cut into pieces, and serve.
