Jelly (Guava)

Source: Hildagonda J. Duckitt, 1891

Instructions

  1. Take nice ripe guavas, peel them, cut them through, and just cover them with water.
  2. When quite soft, pour them into a large, coarse bag, something like a jelly-bag, and leave it to drain all night.
  3. Next day, add to every two cups of the juice, when it boils, one cup of sugar.
  4. Boil briskly till the consistency of jelly.
  5. To test it, pour a little into a tumbler of cold water. If it does not mix with the water, it is ready to be poured into moulds or jars.
