Fālūdhajiyya (Fālūdhaj-Style Sweet Meat)

Ingredients
- lean red meat
- tail fat
- dirham salt
- dried coriander
- cinnamon
- sugar and honey
- saffron
- sweet almonds
- starch (nashāʾ)
- sanbūsaj
- rosewater
Instructions
- Render tail fat, sweat small elongated lean meat with a dirham salt and coriander; cover with water and a piece of cinnamon; cook until done but not parched.
- Add pounded sugar and honey to need, color with saffron, add a handful of peeled sweet almonds; stir until it sets.
- For a firmer set, add up to an ūqiya of starch dissolved in water to the sugar/honey (editorial variant).
- Settle over the fire, then arrange fried white sanbūsaj stuffed with almonds and sugar on top.
- Sprinkle rosewater, wipe the sides, and take up.
