Preserve (Citron) (From My Grandmother's Recipe Book.)

Instructions

  1. Scrape the rind, cut the citrons in halves, and take out the pulp.
  2. Lay them in a basin of hot water to which a handful of salt has been added. Change the water the next day, then leave them for two days longer in water.
  3. After that, boil them in clean water till they are soft enough to put a reed through.
  4. Press all the water out carefully, laying them on a cloth to cool.
  5. For each pound of fruit take two of sugar. Make a syrup of the sugar, allowing one cup of water for a cup of sugar, and clarify it with an egg.
  6. Boil for two days on a slow fire.
  7. Keep well corked in glass bottles.
