Pudding ("Schaum" [Foam] or "Bessie's")

Instructions

  1. Set 3 breakfast-cups of milk to boil with 3 tablespoonfuls of sugar, keeping half a cup to mix with 3 tablespoonfuls of maizena, a dessertspoonful of butter, and the yolks of 3 eggs.
  2. Add a tiny pinch of salt, and flavour with 1 teaspoonful of vanilla essence, or a bit of cinnamon, or 10 drops of essence of almonds.
  3. When the milk boils, pour in the maizena mixture and stir till quite done, which can be told by the maizena coming off from the bottom of the saucepan.
  4. Have ready the whites stirred to a stiff froth. Draw the saucepan to the side and let the whites lie on the boiling mixture for a minute or two before stirring them lightly into the pudding.
  5. Pour into a wetted mould and turn out when cold. Serve with preserved peaches, or very good without.
  6. A smaller pudding of this kind is nice for invalids — say one cup of milk, one spoonful of maizena, one fresh egg, and the other ingredients in proportion.
