Jelly (Mrs. Alexander Van der Byl's Recipe)

Ingredients
- 2 quart packets Gelatine
- 12 tablespoonfuls Brown Sugar
- 6 Eggs
- 18 Cloves
- 1 tumbler Lemon Juice
- 2 sticks Cassia or Cinnamon
- 1 bottle Sherry
- 4 Lemons
- 3 wineglasses French Brandy
- 3 Eggs
Instructions
- Put one cup of cold water on two quart packets of gelatine to soak until well soaked.
- Pour in three cups of boiling water.
- Whisk the whites of the eggs to a froth.
- Add wine, brandy, the lemon peel, and all the other ingredients (brown sugar, cloves, and cinnamon sticks) to the whisked egg whites.
- Stir all the ingredients well.
- Let it boil up three times.
- Take it from the fire and pour one cup of cold water on it.
- Let it stand for five minutes.
- Strain through jelly-bags until quite clear.
- Pour into moulds.
