Jelly (Mrs. Alexander Van der Byl's Recipe)

Ingredients

Instructions

  1. Put one cup of cold water on two quart packets of gelatine to soak until well soaked.
  2. Pour in three cups of boiling water.
  3. Whisk the whites of the eggs to a froth.
  4. Add wine, brandy, the lemon peel, and all the other ingredients (brown sugar, cloves, and cinnamon sticks) to the whisked egg whites.
  5. Stir all the ingredients well.
  6. Let it boil up three times.
  7. Take it from the fire and pour one cup of cold water on it.
  8. Let it stand for five minutes.
  9. Strain through jelly-bags until quite clear.
  10. Pour into moulds.
