Luncheon Dish — Soused Fish

Instructions

  1. Cut a large onion very thinly and pour a little salt and boiling water over it; then drain.
  2. Lay the remains of any cold boiled fish in a pie-dish with the onion, a few whole allspice, a cut-up red chilli, a few bay leaves if liked or a few coriander seeds, 1 oz. of Lucca oil, and 3 oz. of vinegar, in layers.
  3. Let it stand for an hour or more.
  4. Then cover over and steam in a cool oven for a quarter of an hour.
  5. To be eaten cold.
