Instructions

  1. Take the crust from a stale loaf, and cut slices of bread and butter from the crumb.
  2. Butter the inside of a pie-dish and line it with the bread and butter.
  3. Add a layer of apples, pared, cored, and cut in slices.
  4. Strew over them lemon-peel cut very fine, and sugar.
  5. Continue adding apples, lemon-peel, and sugar until the dish is full.
  6. Squeeze over the whole the juice of two lemons.
  7. Cover the dish with the bread crusts and peel of the apples to prevent burning.
  8. Bake an hour in a quick oven.
  9. When done, remove the crusts and peels and turn out in a dish carefully.
  10. Serve with thin custard.
