Mayonnaise (Mrs. Fleming's Recipe)

Ingredients
- 2 Eggs
- Lucca Oil
- 2 tablespoonfuls Vinegar
- 1 teaspoonful Salt
- 1 teaspoonful Mustard
- Cayenne
- 1 teaspoonful Sugar
- 2 tablespoonfuls Cream
- 1 dessertspoonful Oil
- 1 tablespoonful Vinegar
- 1 teaspoonful Onions
- Parsley
- Pepper
- Cold Chicken
- Lettuce
- Beetroot
- Hard-boiled Eggs
- Olives
- Anchovies
- Capers
Instructions
- Beat the yolks of two eggs well.
- Add gradually drop by drop Lucca oil, until it is worked into a stiff ball.
- Gradually add the vinegar, salt, mustard, and cayenne, until the sauce is thin enough to pour over the meat with the consistency of cream.
- At the last moment before pouring, add two tablespoonfuls of cold cream to the mayonnaise.
- Remove all the meat from the bones and put into a pie-dish.
- Pour over the meat about a dessertspoonful of oil, a tablespoonful of vinegar, a teaspoonful of chopped onions, and some parsley, pepper, and salt.
- Leave the meat to marinate for half an hour.
- Remove the meat from the marinating liquid.
- Put alternate layers of meat, lettuce, and beetroot on a dish, pouring the mayonnaise mixture over each layer.
- Garnish with hard-boiled eggs, olives, and anchovies, and add a few capers if desired.
