Preserve (Tomato) (Mrs. Ahren's Recipe.)

Source: Hildagonda J. Duckitt, 1891

Instructions

  1. Take middle-sized fruit. Prick it and cut an incision at the bottom.
  2. Lay it in lime water for a night -- a tablespoonful of lime in two bottles of water.
  3. The next day lay the fruit in a little salt water.
  4. Preserve in an equal quantity of sugar. Oil the saucepan, then put in layers of fruit and sugar alternately, and boil slowly.
  5. Add half an ounce of ginger in a muslin bag during the boiling, and take it out when done.
