Beef à la Mode

Ingredients
- 10 lb Round of Beef
- 2 teaspoons Salt
- 2 teaspoons Fine Pepper
- 1 oz Fine Saltpetre
- 1 tablespoon Brown Sugar
- 1 teaspoon Mixed spices
- 1 tablespoon Vinegar
- Strips of Fat Bacon
- Breadcrumbs
- Suet
- Parsley
- Thyme
- Onion
- 0.5 tumbler Red Wine
- 1 spoonful Flour
- Lard and Gravy
Instructions
- Hang the beef until quite tender.
- The day before cooking, spread over the beef a mixture of the spices (ginger, mace, allspice, cloves, and coriander seeds), brown sugar, salt and pepper, moistened with vinegar.
- The next day, fill the hole where the bone was taken out with a highly seasoned stuffing made of breadcrumbs, suet, parsley, thyme, and a few shreds of onion.
- Skewer the opening and roll the meat into a good shape.
- Lard the outside with strips of fat bacon.
- Place the beef on a small tripod on a baking-dish into the oven.
- Baste the meat continually with a little lard and gravy throughout cooking.
- Half an hour before the meat is done, pour over it half a tumbler of red wine into which a spoonful of flour has been stirred.
- Cook for four or five hours total until done.
